Crimson Beet Salad
2 cups cooked beets, grated
1/2 cup finely sliced leeks or green onions
1 cup shredded cabbage
Dressing
1/4 cup mayonnaise
1/3 cup sour cream
1/4 teaspoon dehydrated horseradish
1/4 teaspoon curry
1 teaspoon salt
Ground pepper
Mix together salad dressing ingredients. (Flavor improves if made a day ahead). Fold dressing into vegetable combination gently. Garnish salad plate or bowl with lettuce leaves. Makes 5-6 servings.
